
Corn Bread
Whilst visiting Dallas, Texas a few years ago the Corn Bread served was wonderful. We just had to see if we could make some for ourselves. This version has less fat and sugar whilst still tasting good.Serve it with our Vegetarian Chilli!

1 1/2 cups Strong White Bread Flour
1 cup Corn Meal (fine grade)
1 tbsp Baking Powder
1/2 cup cooking oil (eg light in colour olive oil, rapeseed etc)
3 eggs
1 x 418g can creamed corn*
1/4 cup milk (we use soy milk)
1/2 tbsp Bouillon Powder
15g Honey
*if you don't have creamed corn use an additional 3/4 cup of milk

Method
Set fan oven to 160 C. Mix all ingredients together and bake for 45-50 mins. Test with a skewer to ensure bread is baked through.
If you are in a rush it can be cooked in the microwave on full power for 5mins 30secs for 1000woven, then allow to stand for a further 5 minutes.
